4. Using a slotted spoon, remove bacon from paper towels to drain; when cold enough to handle, shred it into small pieces. 1 tablespoon of bacon fat should be left in the skillet; discard the rest or preserve it for another use.
5. In a skillet, saute the onion and garlic in the reserved 1 tablespoon bacon oil until softened but not browned, about 1 minute.

6. Bring the vinegar and sugar to a boil. Reduce heat to medium-low and simmer until syrupy, about 5 minutes, stirring frequently.
